Wines A genuinely boutique Vineyard & Cellar Door, Bou-saada is always looking to provide wines which are interesting and different. We have a selection of fine white and red wines all of which are estate grown. Newly released under our premium label, Bou-saada First Fruits, are our Pinot Noir and Fume Blanc wines. Fume Blanc was first used as a wine name by Napa Valley's Mondavi Winery in 1968. Mondavi had been offered a crop of particularly good Sauvignon Blanc grapes by a grower. At that time the variety had a poor reputation in California, but Mondavi recalled enjoying French Pouilly-Fume, a Sauvignon Blanc-based wine from France's Loire Valley. Also, "blanc fume" is the local name of a white fog from the river below that envelops the Loire. Looking for a "new label", Mondavi Americanized the name. Robert Mondavi oak-aged Sauvignon Blanc was released under the name Fume Blanc in 1968 and became an immediate success, and the name was later officially accepted as a synonym for Sauvignon Blanc. This was at least in part due to the fact that Mondavi deliberately did not trademark the name, instead encouraging other wineries to create their own versions. In 2005, in consultation with our winemaker, Nick Spencer, we decided to take a portion of the Bou-saada Sauvignon Blanc grapes and create a Fume. Hence, these grapes were put into new French oak and the lees were stirred every month for 14 months. Only 700 bottles of this wine were made and will appeal to the connoiseur who understands how rare this wine is in Australia. A bottle of Bou-saada' s First Fruits Fume Blanc is grown, made and bottled in Mittagong and would be a wonderful gift genuinely representative of the Southern Highlands produce. |
